Easy Vegetable Broth


I like doing things simply as well as saving money, so I use a vegetable base to create vegetable broth. This little jar of veggies makes cooking these plant based meals so easy. I can't imagine trying to find the room in my cabinets for all of the vegetable broth I use. And, I am certainly not making it from scratch. That's just not my thing. If it's yours, then more power to you. I am just not that big of a fan of cooking to go that extra mile.


So, I find this little gem on the grocery store shelf, in the aisle with all of the other premade broths. It's usually either way up high or way down low since the premade stuff takes up all of the middle shelves. 1 tsp makes one cup of broth, so just add it to one cup of hot water and viola! you have vegetable broth! Yay! You get 38 cups of vegetable broth from just one of these jars. Now, just know that this little gem packs 710 mg of sodium per teaspoon so this may not be for you if you are on a low-salt diet. Or, maybe you just thin it out to 1/2 tsp per cup of water.


There are other varieties, not only seasoned vegetable. This is just my go-to for plant based meal prep, but feel free to try the others. They are equally delicious!
