Heart Healthy Cornbread
The cornbread here is an adaptation from Forks Over Knives cookbook. I've reduced the maple syrup and increased the milk. We like our cornbread sweet, but not that sweet. At this sweetness it's a good compliment to beans & rice or chili. Any sweeter and I think it qualifies as dessert, or cornbread cake as I call it.

It's vegan and gluten free. It doesn't require any oil, but there is fat in the milk, so it's not fat free. Still, very good and moist. Enjoy!
Serves: 4 Total Time: 45 minutes
Ingredients:
1 cup oat flour
1 cup cornmeal
1 1/4 cup plant based milk
1 1/2 Tbsp ground flax seed
1/2 cup applesauce
1/4 cup maple syrup
1 tsp baking powder
1 tsp baking soda
Instructions:
In a medium mixing bowl, whisk together milk and flax seed and set aside.
In a large mixing bowl, combine oat flour, cornmeal, baking powder, and baking soda. Stir to combine.
To the milk & flax mixture - add applesauce and maple syrup. Whisk to combine.
Pour wet ingredients into dry ingredients.
Stir well to fully incorporate.
Pour into 8x8 non-stick baking dish.
Bake at 375 farenheit for 25 minutes, or until toothpick (or knife) stuck in center comes out clean.
Remove from oven and place on baking rack to cool.
Serve with butter.
Chef's Notes: I do not keep oat flour on hand so I make mine from thick rolled oats (like oatmeal oats - not instant). I take a cup of oats and put them in the blender on the highest speed ("mill" on my machine) and mill them for 30 seconds. This creates a fine flour perfect for the recipe. You don't have to do this, but I actually prefer it this way.
